Honey Tarragon Carrots

This sweet, delicious recipe can serve as a side dish or a meal itself. It's so easy a bachelor can do it.

Ingredients:
  • 1 pound baby carrots (they're in a bag! totally easy!)
  • 1 cup water (the landlord pays for the water!)
  • 2 tablespoons honey (honey moves slowly)
  • 1 teaspoon tarragon, dried (no one really knows what tarragon is. little known fact: a good grocery store will alphabetize the spices).
  • 1/4 teaspoon salt (negotiable)
  • 1/4 teaspoon ground black pepper (equally negotiable).
Gameplan:
  • In a medium pan, simmer the carrots in the water, covered, for 10 minutes.
  • When that's done, add the rest of the ingredients (spread the honey out a bit if possible).
  • Then turn the flame to high and cook until the liquid is gone.
Word to the wise: Keep moving the carrots so they don't end up black on one side.
